French Toast

When my Mom and I were in LA recently, we stopped at Toast where I had the best classic french toast. The key to this particular french toast seemed to be the addition of vanilla. My mom used to make us french toast every Thursday morning when we were growing up and it was always such a treat. I decided to recreate it on Sunday morning as a fun start to the day.

French Toast (serves 2)

1 loaf french bread, cut into 1 inch slices
2 eggs
3/4 cup almond milk
1 tsp vanilla

Heat pan over medium heat. Whisk together eggs, milk and vanilla. Add bread and soak for 30 seconds on each side. Add butter to heated pan and then add bread. Cook for 3-5 minutes on each side until golden brown. Serve with maple syrup and your favorite fruit topping!

 

I used a petite french loaf since there are just two of us. I would suggest a regular sized french bread if you’re planning on serving more. For a slightly different take on french toast, check out this french toast sticks recipe from Pearl!

    Saw this post just in time for breakfast this morning…its fall break and the kids are out of school…hence the fancy mid-week breakfast. It was DELICIOUS! I had to use our GF bread, but still awesome and I think it will become my French toast recipe. Never heard of adding milk and vanilla to the mix. Thanks Erica!!!
