Monster Cookies

 

 

Monster cookies have been a favorite treat of mine for as long as I can remember. I like to make a big batch to freeze and take them out one at a time for a sweet snack, sometimes after a tough workout. Something about the mix of peanut butter and oats has convinced me they’re somewhat healthy. I’m pretty sure that’s just in my mind though! I made this particular batch to power my friends and I through 200+ miles of running around Arizona this weekend (read more about it here and tomorrow).

Monster Cookies

6 eggs
1 pound brown sugar (2 1/4 c.)
1/2 tbsp vanilla
1/2 tbsp syrup (karo)
4 tsp baking soda
1/2 pound of butter
1 1/2 pounds of peanut butter (3 c.)
9 cups oatmeal
1/2 pound M&Ms (or chocolate chips)

Preheat oven to 350. Mix brown sugar and butter, add eggs.  Beat well. (I use a KitchenAid mixer and highly recommend a high powered mixture.) Add rest of ingredients in order; mix well after each ingredient. Drop large tablespoon on ungreased cookie sheet (I put mine on parchment paper and then a cookie sheet for easier clean up). Flatten to 1/2 inch thick with bottom of glass dipped in sugar. Bake at 350 for 10-12 minutes.
