Power Bars

My mom suggested making power bars during my visit. I thought they’d be a great pre- or post-workout snack and quickly agreed. Since you don’t actually bake them, there’s no worry about heating up the house even more in the summer. High in protein and fiber, they are also gluten-free. We omitted the stevia, but definitely included the chocolate chunks. The bars crumble a bit so it’s best to leave them in the baking dish while you eat them.

Power Bars (recipe via elena’s pantry)

2 c. almonds (raw)
1/2 c. golden flaxmeal
1/2 c. unsweetened shredded coconut
1/2 c. creamy roasted almond butter
1/2 tsp. celtic sea salt
1/2 c. coconut oil
4 drops stevia
1 tbsp. honey
1 tbsp. vanilla extract
1 c. chocolate chunks (optional)

 

Place almonds, flaxmeal, shredded coconut, almond butter and salt in food processor. Pulse briefly until blended. In a small sauce pan, melt coconut oil over very low heat. Add stevia, honey and vanilla into oil and stir. Add coconut mixture to food processor and pulse until ingredients form a coarse paste. Press mixture into 8×8 baking dish (we greased the dish with a little coconut oil). Chill in refrigerator for 1 hour. Melt chocolate over very low heat, stirring continuously. Spread melted chocolate over bars and return to refrigerator for 30 minutes. Remove and cut into bars.
